Gebrannte Mandeln Recipe: The Sweet Taste of an Austrian Christmas Market
Close your eyes and imagine walking through an Austrian Christmas market.
Tiny lights sparkle overhead. Wooden stalls are filled with ornaments, toys, and holiday treasures. A familiar song drifts through the cold winter air. It sounds like “O Christmas Tree”—or rather, “O Tannenbaum.”
Then you notice an irresistible aroma: warm cinnamon, caramelized sugar, and freshly roasted almonds.
The sweet, comforting smell of gebrannte Mandeln is one you will often encounter at Christmas markets across Austria and Germany. And you do not need to fly to Vienna to share a little of that experience with your child.
Making a traditional treat together is an easy way to turn learning about another country into something children can see, smell, taste, and remember.
What Are Gebrannte Mandeln?
The name gebrannte Mandeln literally means “burned almonds,” but don’t let that worry you. The almonds are not burned. They’re cooked with sugar, water, and cinnamon until each one is covered in a sweet, crunchy coating.
Gebrannte Mandeln are a favorite at Christmas markets throughout Austria, Germany, and other parts of Central Europe. Vendors traditionally serve them warm in little paper cones, making them easy to carry while exploring the market—and wonderful for warming cold hands.
Although they are especially popular during the Christmas season, you may also find them at festivals, fairs, and other celebrations throughout the year.
A Christmas Market Adventure for Kids
Food is one of the easiest ways to help children become curious about another culture. A map can show them where Austria is, but the smell of cinnamon almonds can make an Austrian Christmas market feel real.
At Around the World Stories, we believe children learn more naturally once they are inspired. That’s why our cultural activities begin with an adventure.
From Our Austria Story
This recipe comes from our Austria adventure, The Wienerwald Christmas Market.
In the story, Mirabell and her family travel to Vienna for Christmas. Mirabell is excited to help her Uncle Fritz at his woodcarving stand—and perhaps sell a few carvings of her own.
But beneath the busy market, a community of animals is not feeling nearly as festive. The human visitors have disturbed their peaceful home, and the animals are determined to do something about it.
One of those animals is Igel—which means “hedgehog” in German. In Igel’s opinion, humans cannot be entirely bad if they make such an irresistible sweet and nutty treat.
So we decided to bring a little bit of Igel’s Christmas market into your kitchen.
Igel's Gebrannte Mandeln
Makes 2–3 servings
Ingredients
- 1 cup sugar
- 1/2 cup water
- 1 tablespoon ground cinnamon
- 2 cups raw almonds
Directions
1. Combine the water, sugar, and cinnamon in a saucepan. Bring the mixture to a boil over medium heat, then add the almonds.
2. Cook, stirring continuously, until the liquid evaporates and leaves a thick, sugary coating on the almonds.
3. With an adult handling the hot pan and sugar mixture, carefully pour the almonds onto a parchment-lined baking sheet or silicone baking mat. Use two forks to separate any almonds that have stuck together.
4. Allow the almonds to cool completely—at least 15 minutes—before eating.
The sugar coating will be extremely hot when the almonds first leave the pan, so pouring and separating them must always be handled by an adult.
Lecker! That means “delicious” in German, and we think it’s the perfect word for Igel’s cinnamon-sugar almonds
As you enjoy them, imagine Mirabell’s market in the Vienna Woods: the wooden stalls, the winter air, the freshly carved decorations, and a certain little hedgehog wondering what all those humans are doing.
Take the Adventure Further
Today, you made a traditional Austrian Christmas market treat. But what if your child could step inside the story behind it?
In The Wienerwald Christmas Market, children can follow Mirabell’s adventure, meet Igel and the other animals, and discover more about Austrian culture along the way.
The story is part of our Austria Country Set, which includes four original audio adventures for children, recipes, maps, crafts, games, a video art lesson, and other cultural activities.
Keep Exploring with Around the World Stories
Austria is just one of many countries you can explore at Around the World Stories.
Each Country Set includes four 30-minute stories supported by traditional recipes, map challenges, crafts, games, art lessons, and other activities that let children explore each destination in different ways.
Because when children become curious about a place, geography stops being something they have to memorize—and becomes somewhere they want to explore.
